Our Wonderful Planner/Coordinator

Upon the recommendation of fellow Offbeat Brides, I got into contact with Lindsey at Dandy Lion Events. She is fantastic! Full of ideas and energy, and very organized. She allows me not to worry too much about whether I’m remembering every little detail, because I know if it’s important, she’ll take care of it. Her references could not have been more glowing, and her blog is well worth a read.

Venue Selection

We visited a ton of different places around town, and it finally came down to The Cator Wolford Gardens or The Solarium. Both are gorgeous, have lots of history, and have great outdoor areas. The Solarium is a lot more comfortable though, and leaves us a bit more room in the budget for other stuff, so we decided it was the right fit for us. Nikkia and Beth have been really friendly and helpful throughout the planning process, which is SO nice.

Picking a Caterer

After a delicious tasting at Sun in My Belly, we’ve decided on a menu!

Appetizers:
Burgundy beet risotto tarts with thyme and fresh goat’s cheese
Fried green tomatoes with horseradish sauce and pickled red onion
Mini corn muffins with carolina pulled pork and purple slaw
Medjol dates wrapped in prosciutto with soft goat’s cheese

Salad:
Venus salad of baby field greens with lemon scented artichoke hearts, roasted red peppers, crumbled gorgonzola, black walnuts, drizzled with balsamic vinaigrette

Buffet entrees:
Zinfandel and rosemary marinated filet of beef tenderloin with gorgonzola cream sauce
Balsamic glazed free range chicken breast with caramelized vidalia onions chutney and fresh rosemary

Buffet sides:
Roasted sweet corn and zucchini in thyme butter
Buttery baby bliss potatoes with shallots and parsley
Garlic and shallot sauteed haricots vert with grape tomatoes and toasted pine nuts
Fresh artisan breads with sage scented butter
